Grillin’ & Chillin’: Bacon Cheeseburger Meatballs on a stick

ROCHESTER, Minn. (KTTC) – This May, “the boys” are back! Chef Jim from Wildwood Sports Bar & Grill and Barbecue Brent from Energy Products and Design are again firing up the grill for Grillin’ and Chillin’!

Given that KTTC’s Caitlin Alexander is expecting her first child later this summer, the guys are sharing some great kid-friendly recipes!

Here is the recipe and procedure for Bacon Cheeseburger Meatballs on a stick!

Ingredients makes 5-3 oz meatballs (approx.)
• 1 pound of lean ground beef
• 1 cup bacon crumbles
• 1 8oz block Velveeta cheese
• 1 bottle ketchup
Equipment
• Plastic wrap
• Paper plate
• Marshmallow roasting forks
• Grill preheat to 350 degree or open fire find a spot with low flame and warm coals

Procedure
Divide meat into 5 equal portions
Roll into nice size round balls
Cut Velveeta into 1 inch squares and set aside on paper plate
Remove meatballs from fridge and lightly pat down to form a patty
Place 1 tbs of bacon in middle
2 blocks of cheese in top of bacon
1 tbs of ketchup on top of cheese
Roll meat around filling and form back into a meatball, place in fridge to chill for 1 hour
Place on Fork and cook until done this will vary based on heat but 15 minutes turning often should be
done
Eat these right off the stick or Smash on a bun or wrap in tortilla
